Mykiah is quite enamored with making her own hummus lately. It's pretty easy for me. Just buy her a can of garbanzo beans and she'll put together something yummy for her lunches during the week. It all started with this pin:

Here's her favorite recipe at the moment:
Extra Easy Hummus
1 15 oz can garbanzo beans, drained, liquid reserved
Dried minced garlic to taste
2 tsp chili powder
1/2 tsp salt
1 tbsp olive oil
In a food processor, combine garbanzo beans, garlic, chili powder, salt and olive oil. Blend on low speed, gradually adding reserved bean liquid until desired consistency is achieved.
We love hummus at our house... always an easy source of protein for my vegetarian, too.
