We're a month into this whole Easy Lunchbox thing and I'm totally loving it. Here's some of the lunches we've taken this month:
Spaghetti salad, grapes and cheez-its or pretzels.
Turkey sandwiches/wraps, apple slices (bought that way at store), baby carrots, sugar snap peas, cocoa dusted almonds.
Salads, cold pizza, apple slices (cut with apple corer & soaked in 7-up to prevent browning... way cheaper than the store bought slices).
Probably my favorite. Make your own pizza -- bagel thin, sauce, cheese, pepperoni or diced peppers. Apple slices, carrots, cocoa dusted almonds. I sent this with all 3 of my kids and they loved it. Fun variety.
This week's lunch: lunchbox burritos (recipe tomorrow), grapes & apple slices, carrots & grape tomatoes. Brady and Ches don't do tomatoes so they got Cheddar Bunnies with their burrito.
We also took leftovers as appropriate (baked potato, taco salad, etc.). I love this lunch system. I think of it as a protein, a veggie and a fruit. It makes me control my portions, and makes me think of all the ingredients of a lunch when I'm planning and not just what kind of sandwich to make, then throwing in a bag of chips and a fruit cup. Everyone in my family uses it. Dan was a little reluctant and then we made him a box one night. He loved the variety of it. Best investment I've made in a long time.
